Lentil Oatmeal & Raisin Cookies


Lentil Oatmeal Raisin Cookies

Ingredients (use vegan versions):

2 cups whole wheat pastry flour
1 teaspoon baking powder
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon alls pice
1 1/2 cups sugar
3/4 cup vegetable oil
1 "egg" substitute
2 teaspoon vanilla or coconut extract
1 1/2 cups lentil puree
1 cup rolled oats
1 cup raisins or dried cranberries
1 cup dried shredded coconut
2/3 cup lentils

Directions:

Preheat the Oven to 375 degrees Fahrenheit.

In separate bowls;

-Combine the Flour, Baking Powder, Salt
and Spices.

-Mix the Sugar, Oil, "Egg",Extract and
Puree together until thoroughly blended.

Add the Wet mixture to the dry, and stir
until dough sticks together.
Mix in the oats, coconut and fruit.

Bake for 10-15 minutes. I like to rotate
my cookies after 5 minutes.

---The Lentil Puree---

Take the 2/3 cup of rinsed lentils and
2 cups of water, bring to a boil and let
simmer for 40 min. Puree in food
processor or blender if it has the
capability. I suggest doing this before
you begin baking as to minimize baking
time.

Makes: 30 servings, Preparation time: 30 minutes, Baking time: 15 minutes
