Potatoes



Potatoes contain lots of vitamin C and impressive amounts of potassium. They are a good source of vitamin B6 as well as containing smaller amounts of the other B vitamins. And to top it all, they are an excellent source of fibre! Just remember to top your baked potatoes with healthy low-fat options such as yogurt, tuna, low-fat cottage cheese and vegetables instead of butter, margarine, sour cream or high-fat cheese. And if you can’t buy organic potatoes, give the skins a miss as they are invariably sprayed with toxic chemicals.
