Zucchini Relish

ZUCCHINI RELISH

7 cups zucchini, shredded
3 cups carrots, shredded
4 red onions, shredded
2 red peppers, shredded

-Combine in a large pot and sprinkle with 1/4 cup salt
-Drain liquid
-To the rest add the following

4 cups sugar
2 1/2 cups vinegar
1 tbsp. mustard seed
1 tbsp. celery seed

-heat to boiling
-Pour into jars and can as usual
