
Wonderful Green Soup (raw)
2 cups spinach, tightly packed
1/2 cup fresh parsley
1/4 cup shelled hemp seeds
1/2 tsp. salt
1/2 tbsp. fresh ginger, grated
1 tbsp. oil (flax or hemp..)
2 tbsp. walnuts
1 avocado, diced
1 large carrot, finely grated
With a blender of food processor, blend the spinach, parsley, hemp seeds, salt, ginger, oil, walnuts, and water until smooth. Portion into bowls and garnish each with equal amounts of avocado and carrot. Serve immediately. Makes 2 large or 4 small servings.
