Roasted Vegetables Wrapped in Steamed Chard
carrots, turnips, beets, squash, potatoes, sweet potato, onions
1/4 cup olive oil
1 tsp. each nutmeg, paprika, and dried oregano
1 tbsp. coarse sea salt
2 tbsp. tamari
Oven 350F
Prepare all the vegetables and place them in a large baking pan. Add ingredients and bake 1 hour. Remove from heat and stir. Cut off ends of chard and discard. In a steamer with boiling water, place the whole leaves of chard under cold water so that they are cool enough to handle. Take one leaf of chard and place 2 scoops of veggies in the center of the leaf. Fold over the sides, then fold over the ends to seal the veggies inside. Place on a platter seam side down. Place the bundles in a baking pan and brush with a bit of oil, then place them in a 300F oven for 15-20 minutes before serving time.
